Healthy soft fish tacos

When you can’t get to Mexico, bring a little Mexico to you.

I taste tested my way through Tulum, obsessed with consuming fish taco. It amazed me how one taco can be made so many ways. Healthy, tasty, bland and beautiful. I’ve incorporated the best of my eating endeavours to create these fish taco’s, with a healthy salsa twist on the side.

Ingredients

  • 300 g firm white fish, diced

  • ¼ small red or white cabbage, cut into thin strips

  • 1 cucumber thinly sliced

  • 2 tsp Cajun spice

  • 6 soft corn tortillas

  • 2 tbsp natural yogurt

Salsa

  • ½ avocado, diced

  • ¼ pineapple, diced (or 1/2 cup canned)

  • ¼ cup mint, chopped

  • 1 lime, juiced

Method

Prepare salsa by combining avocado, pineapple and mint with a squeeze of lime juice and set aside.

Cook

Over a low heat, cook diced fish in pan with oil. Season with Cajun spice and a squeeze of lime and cook for approximately 4 minutes.

Once cooked, remove from heat and spoon into tortillas, along with vegetables,, salsa and a dollop of yogurt.
