Prawn pick me up stir fry

I call this dish when Summer meets Winter. It’s a fresh and healthy prawn and soba stir-fry.

The prawns and coriander give it a light taste with a Summer afternoon vibe. The garlic and ginger make it feel a little hot and spicy.

Apart from tasting fab, It’s also a great immune supporting meal, with a lovely balance of protein and complex carbs.

…..and it’s super easy and quick to make.

Ingredients

  • 300 grams of green prawns

  • 1 clove of garlic

  • 1 tbsp tamari or soy sauce

  • 2 shallots finely chopped

  • 2 cm square of ginger finely grated

  • 2 cups of vegetables of choice - broccoli, carrot, mushrooms, eggplant, spinach, capsicum

  • 1 tbsp of extra virgin olive oil (EVOO)

  • 1 large handful of soba noodles (or noodles of choice)

Method

🥣 stir-fry garlic, shallots and ginger in a frying pan with olive oil.

🥕 Add mixed vegetables. I used shiitake mushrooms, snow peas, spinach and carrots.

🍤 Once sautéed, add the prawns and cook until they turn pink. Add the tamari/soy sauce

🍜 Boil some soba noodles and combine with prawn mix. Combine the vegetables, noodles and prawns until the flavour is evenly spread

🌶 Serve with chilli and coriander.
