Simple, sensational soba (optional) miso noodles

Serve sober or with wine. (See what I did there πŸ˜„)

This is such an easy, tasty, healthy and filling meal when you are short on time….but still want oodles of flavour.

Soba noodles are a lower-calorie, gluten-free alternative to white pasta. They are made from buckwheat and are high in fibre and protein.

Ingredients:

  • Soba noodles x 1 serve

  • 2 cups of mixed vegetables (I used shiitake mushrooms, broccoli, spinach and shallots)

  • 1 tsp of white miso paste

  • 1 tsp of tamari

  • 1 tsp of olive oil

  • Dried chilli (add to taste)

Method

Fill a saucepan with water and bring to boil. Cook noodles as per packet directions

Set aside cooked noodles and reserve 1/4 cup of hot water

Put the pot back on the heat and cook vegetables with oil. Add tamari and cook veggies until soft

Place the noodles back into the pot and stir through the veggie mix

Add the miso paste to the reserved water and mix through

Add the miso paste mix to the vegetables and noodles and stir through for a couple of minutes

Remove from the heat and place in a serving bowl.

Serve with chill

This would also taste great with garlic, ginger, sesame seeds and chilli
