One pot wonder(ful) - chicken and vegetable honey bake

One pot chicken bake

Ingredients:

  • 4 chicken thighs

  • 1 bunch asparagus ends trimmed

  • 2 cups of kale chopped

  • 1 punnet cherry tomatoes or 4 x Truss Tomatoes

  • 2 corn cobs cut into small cobs around 5cm in length

  • 1 butternut pumpkin diced into 2cm cubes

  • 1 tbsp cold-pressed olive oil

  • pinch of sea salt

(tip - use any combination of vegetables you have at home)

For marinade

  • 1/4 cup of cold-pressed olive oil

  • 2 tbsp apple cider vinegar

  • 1 tbsp seeded mustard

  • 1 tbsp honey

  • 1 clove garlic, crushed

  • 2 tbsp parsley, chopped

Method: -Preheat oven to 180°.

Mix - Prepare marinade by combining all marinade ingredients in a small bowl and whisk until combined. Set aside.

Arrange chicken and vegetables in a baking tray lined with baking paper. Pour dressing evenly over the chicken and vegetables.

Place the tray in oven and bake for 35-40 minutes, until the chicken is cooked through.

Serves four

Tips with the leftovers for the second night, chop up vegetables and chicken and turn into a stir-fry with soba Noodles.

Vegetarian option: - Bake vegetables as per instructions and serve with spelt pasta.
